Sweet Potato Spice Cake
Ingredients
- 1 cup Sweet Potato Puree **
- 1/2 cup pure Maple Syrup
- 2/3 cup Avocado Oil
- 2 large Eggs, room temperature
- 2 teaspoons Vanilla Extract
- 1 1/3 cup Bob's Red Mill One-to-One Baking Flour
- 1 teaspoon Baking Powder
- 1 1/2 teaspoons Baking Soda
- 2 teaspoons Ginger, ground
- 2 teaspoons Cinnamon
- 1/2 teaspoon Nutmeg
- 1/4 teaspoon Cloves
- 1/2 teaspoon Salt
- Optional: 1 tablespoon Icing Sugar
Takes , serves 8-10.
Instructions
- Preheat oven to 350 degrees F. Grease, with coconut oil, a bundt cake pan or 8 inch round pan and set aside
- With a mixer, mix the sweet potato puree, maple syrup, oil, eggs and vanilla extract until well combined.
- Add in flour, baking powder, baking soda, spices and salt mixing until combined. Do not over mix.
- Pour batter into pan and bake for 45 minutes or until a knife inserted into the cake comes out clean.
- Place the pan on a cooling rack for approximately 20 minutes before turning the cake out of the pan.
- Optional: After cake cools, sprinkle icing sugar on top
- Homemade Sweet Potato Puree: Wrap a medium sweet potato in foil and place in the oven, on bake 400 degrees F, for 45-55 minutes. Once cooled, peel the skin off and with a potato masher, mash the sweet potato.
