Oatmeal Chocolate Chip Cookies (Gluten-Free, Dairy-Free, Refined Sugar-Free)
Ingredients
- 1 cup (melted) coconut oil
- 1/2 cup of honey
- 2 eggs
- 1 tablespoon vanilla extract
- 2 1/4 cup gluten free rolled oats
- 1 3/4 cup gluten free flour (I use Bobs Red Mill 1-to-1 baking flour)
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup mini chocolate chips (dairy free)
Takes , serves 12-18.
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- In a medium bowl, combine the dry ingredients: oats, flour, sea salt, baking soda and cinnamon
- In a separate bowl, combine butter and honey and mix until well combined around 2 minutes
- Mix in the eggs and vanilla then slowly add in the dry ingredients (do not over mix)
- Fold in the mini chocolate chips. With an ice-cream scooper scoop the cookie dough into a ball and place onto the baking tray. Gentle press done on top of each cookie to flatten them
- Bake one baking sheet at a time for 9 minutes (do not over bake!)
- Remove from the oven and allow cookies to cool for 5 minutes before transferring to a calling rack
