Moist Banana Muffins
Ingredients
- 1 and 1/2 cups of Bob's Red Mill 1-to-1 baking flour (gluten-free)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 3 ripe bananas, mashed
- 1/4 pure maple syrup
- 1 egg
- 1/3 cup coconut or avocado oil
- 1 tsp vanilla (alcohol-free)
Takes , serves 12-18.
Instructions
- Preheat oven to 350 F and coat muffins tins with coconut oil
- In a bowl combine dry ingredients (flour, baking powder, baking soda and salt)
- In another bowl, combine wet ingredients (bananas, maple syrup, egg, oil and vanilla)
- Combine the flour mixture into the banana mixture
- Fold in the chocolate chips (optional)
- Fill muffin tins with mixture until approximately 2/3 full
- Bake for 24 minutes
