Double Chocolate Chip Muffins
Ingredients
- 1/2 cup coconut oil
- 1/2 cup pure maple syrup
- 1/3 cup raw cacao
- 2 large eggs
- 1 teaspoon vanilla extract (alcohol free)
- 1/4 teaspoon Himalayan sea salt
- 1 1/2 cups of gluten free flour (I use Bobs Red Mill one-to-one baking flour)
- 1 tablespoon baking powder (aluminum free)
- 1/2 cup coconut yogurt
- 1/2 cup dairy free chocolate chips (I use enjoy life foods)

Instructions
- Preheat oven to 350 F and coat muffins tins with coconut oil
- In a large bowl mix eggs and maple syrup until combined
- Add melted coconut oil, salt and vanilla and mix well
- Add flour, baking powder, raw cacao and coconut yogurt and mix to combine. Do not over mix
- Fold in the chocolate chips
- Fill muffin tins with chocolate mix until approximately 2/3 full
- sprinkle a few chocolate chips on top of each muffin
- Bake for 20-25 minutes
