Double Chocolate Chip Muffins

Instructions

  1. Preheat oven to 350 F and coat muffins tins with coconut oil
  2. In a large bowl mix eggs and maple syrup until combined
  3. Add melted coconut oil, salt and vanilla and mix well
  4. Add flour, baking powder, raw cacao and coconut yogurt and mix to combine. Do not over mix
  5. Fold in the chocolate chips
  6. Fill muffin tins with chocolate mix until approximately 2/3 full
  7. sprinkle a few chocolate chips on top of each muffin
  8. Bake for 20-25 minutes

Who else is a chocolate lover like me? I made these simple decadent chocolate chip muffins for my kiddies (and me) for Valentine’s Day and they were gone by Day 2! Enjoy!
