Sweet Potato Spice Cake

  1. Preheat oven to 350 degrees F. Grease, with coconut oil, a bundt cake pan or 8 inch round pan and set aside
  2. With a mixer, mix the sweet potato puree, maple syrup, oil, eggs and vanilla extract until well combined.
  3. Add in flour, baking powder, baking soda, spices and salt mixing until combined. Do not over mix.
  4. Pour batter into pan and bake for 45 minutes or until a knife inserted into the cake comes out clean.
  5. Place the pan on a cooling rack for approximately 20 minutes before turning the cake out of the pan.
  6. Optional: After cake cools, sprinkle icing sugar on top
  7. Homemade Sweet Potato Puree: Wrap a medium sweet potato in foil and place in the oven, on bake 400 degrees F, for 45-55 minutes. Once cooled, peel the skin off and with a potato masher, mash the sweet potato.
