Eggs in Sauce + Quinoa Spaghetti
Ingredients
- 200g Quinoa Spaghetti
- 4 eggs
- 1 1/2 cups fresh tomato sauce
- 2 Garlic cloves, minced
- 1 Tbsp Olive oil
- 1/2 teaspoon dried basil
- Salt & Pepper to taste
Takes , serves 2.
Instructions
- Bring water to a boil and add Quinoa pasta cooking for 7-8 minutes
- While pasta is cooking, in a pan sauté, in olive oil, garlic until lightly brown then add fresh tomato sauce and herbs
- Gently crack 4 eggs into the sauce and turn heat down to low and cover the pan with a lid. Be sure to check on the eggs to ensure the yolk remains runny
- Once the spaghetti is cooked drain it and add it back to the pot adding 1 tablespoon of olive oil (to avoid the spaghetti sticking together)
- Plate the spaghetti adding the sauce and two eggs on top
