Eggs in Sauce + Quinoa Spaghetti

Instructions

  1. Bring water to a boil and add Quinoa pasta cooking for 7-8 minutes
  2. While pasta is cooking, in a pan sauté, in olive oil, garlic until lightly brown then add fresh tomato sauce and herbs
  3. Gently crack 4 eggs into the sauce and turn heat down to low and cover the pan with a lid. Be sure to check on the eggs to ensure the yolk remains runny
  4. Once the spaghetti is cooked drain it and add it back to the pot adding 1 tablespoon of olive oil (to avoid the spaghetti sticking together)
  5. Plate the spaghetti adding the sauce and two eggs on top
